
Matsuri, playful, accessible and friendly, offers 14 revolving counter restaurants, where each location expresses its own unique identity under the same signature.
Japanese classics meet bold Japanese-Californian creations, while a range of signature hot dishes and cocktails complete the experience.











In 1986, a Franco-Japanese couple arrived in Paris with a unique concept: a rotating countercolorful plates to indicate prices, and a self-service selection of Japanese cuisine. The first restaurant opens, and Matsuri becomes a pioneer in the field.
In 1988, Matsuri launched home sushi delivery, long before it became the norm.
Then, in 2002, the opening of the restaurant on rue de Passy marked the beginning of an ambitious expansion: Paris, Lyon, Bordeaux… 12 restaurants open in just a few years.


Our ambition: to create the first seated Japanese fast-casual restaurant chain in France.
In late 2023, Adrien de Schompré (former CEO & Partner at Sushi Shop) took over Matsuri, driven by his passion for Japan and his keen knowledge of the industry. Alongside him, Céleste Velarde (former Art Director at Big Mamma) and Sébastien Blanchet (former PWC) are completely reinventing the brand: daring architecture, modernized recipes, and a refreshed identity.
Designed to combine speed, quality, pleasure, and comfort, this new concept re-imagines the French-style kaiten experience — making it more contemporary, more gourmet, and always faithful to the Japanese spirit.
